Niigata Beer is a small company in the Japanese city of Niigata, a major port center and capital of Chubu Prefecture of the same name on the island of Honshu. Niigata is famous for its "white" treasures: snow, rice and sake. It was here that, in 1997, entrepreneur Ken Usami decided to open a brewery known for its second fermentation method in the brewing process. In 2017, Usami received the license to produce whisky, which he had been dreaming a lot. For his offspring, the master chose the name Shinobu, which means “patience” in Japanese. The best distillates are carefully selected to create whisky, which is then aged in bourbon and sherry oak casks, as well as in valuable Japanese oak Mizunara casks, developing a deep, harmonious flavor and aroma.
