The wine is crafted using Jurassic Kimmeridgian limestone and chalk, adhering to a sustainable and organic ethos. Mechanical low-pressure presses are used for extraction, focusing solely on the first press. Gravity is utilized in the process, followed by natural settling and malolactic fermentation. The wine undergoes no filtering, has no added sulphites, and spends 24 months on the lees.
