The taste and aroma of this kind of Merlot perfectly combines shades of mulberry, prunes and pronounced notes of strawberries, which give the wine freshness and brightness.
Perfect with all red and white meat dishes, as well as delicious to drink on its own.
Harvest is done at night to keep the grapes fresh. The two varieties are fermented separately. Fermentation lasts approximately 2 weeks in neutral containers.
3 months aging in stainless steel tanks.
The grapes are harvested from low yield vines from vineyards with clay-limestone soils of the appellations of Carcassonne and Minervo.
The average age of vines is 20 years old.
