In Viognier, the taste and aroma of oak is clearly felt, so Chardonnay is often added to the assemblage to provide floral- fruity notes and mango-apricot nuances for the wine.

Great with oriental food, by itself or with all fish and white meat dishes.

The grapes were cold macerated then pressed, cold settled before fermentation. No malolactic fermentation and aging in oak took place. 

The grapes are harvested from low yield vines from vineyards with clay-limestone soils of the appellations of Carcassonne and Minervo․ The vines are about 15 years old.
